My version of cooking CHICKEN AFRITADA. You can substitute the fresh tomatoes with tomatoa sauce.
600 Gram, cubed (Use Fresh)
Green bell pepper
Chicken stock powder
In a large mixing bowl, season the chicken wings and legs with chicken stock powder and ginger powder.
After seasoning, heat the wok or the non-stick frying pan and roast the chicken slightly golden brown, saute the quartered onion, the chopped garlic, add the fresh cubed tomatoes, the oyster sauce and simmer until tomatoes are smashed; add the ground pepper and cover with lid until chicken is cooked over a low heat then add the sliced carrots and after 5min add the sliced potatoes, once vegetables are cooked, add the green bell pepper, the green peas and simmer for 2min or until vegetables are all well cooked and serve.
