Chicken And Vegetables
|Vegetable oil||3 Tablespoon|
|Bermuda onion||1 Large, thinly sliced|
|Green peppers||3 , seeded and cut lengthwise into strips|
|Ground black pepper||1⁄4 Teaspoon|
|Idaho potatoes||2 Large, peeled and thinly sliced|
|Chicken breasts||2 , halved|
|Homemade chicken broth/Water||1⁄4 Cup (4 tbs)|
1. Heat the oil in a heavy skillet. Add the onion, green peppers, salt, and pepper and cook over low heat until the onion is transparent.
2. Put the potatoes on top of the vegetables in the skillet and then lay the chicken breasts on top of the potatoes. Pour in the broth. Cover and simmer gently until chicken and potatoes are cooked, about 40 minutes.
