Chicken With Mushrooms
|Chicken breasts||4 , split, skinned, and boned|
|Large mushrooms||1⁄2 Pound, sliced|
|Chicken stock||3⁄4 Cup (12 tbs)|
|Light cream||1⁄2 Cup (8 tbs)|
|Chopped fresh tarragon||1 Teaspoon|
In large skillet, melt the butter.
When hot, add the chicken and brown quickly on both sides; remove.
Add mushrooms and cook 3 minutes; remove.
Add flour to drippings.
Stir in stock, cream, and tarragon.
Cook, stirring, until mixture thickens.
Return chicken and mushrooms to pan.
Cover; simmer 10 minutes or until chicken is done.
Season with salt and pepper.
