Dashi With Chicken Balls
|Dried mushrooms||4 , softened and cut into 21 small slivers (Use Forest Ones)|
|Soy sauce||1 Teaspoon|
|Dry sherry/Sake||1⁄2 Teaspoon|
|Soy sauce||To Taste|
|Chicken balls||1 Cup (16 tbs) (1 Recipe)|
|Lemon peel strips||7 Small|
|Watercress sprigs||7 Small|
Simmer mushroom slivers in mushroom soaking water, soy, sake and sugar 10 minutes.
Bring dashi to boil and adjust seasonings to taste with salt and soy.
In each of 7 bowls place 3 mushroom slivers, 3 Chicken Balls and 3 pieces of age.
Ladle hot dashi over and garnish with lemon peel and watercress sprigs
