Dashi With Chicken Balls

Ingredients
  Dried mushrooms 4 , softened and cut into 21 small slivers (Use Forest Ones)
  Soy sauce 1 Teaspoon
  Dry sherry/Sake 1⁄2 Teaspoon
  Sugar 1⁄4 Teaspoon
  Soy sauce To Taste
  Salt To Taste
  Chicken balls 1 Cup (16 tbs) (1 Recipe)
  Lemon peel strips 7 Small
  Watercress sprigs 7 Small
Directions

Simmer mushroom slivers in mushroom soaking water, soy, sake and sugar 10 minutes.
Bring dashi to boil and adjust seasonings to taste with salt and soy.
In each of 7 bowls place 3 mushroom slivers, 3 Chicken Balls and 3 pieces of age.
Ladle hot dashi over and garnish with lemon peel and watercress sprigs
