Chicken And Apricot Stir Fry
|Garlic||1 Clove (5 gm)|
|Chicken breasts||2 , boned, skinned and cubed|
|Apricots||3 , pitted and sliced|
|Chopped scallions||2 Tablespoon|
|Orange juice||3 Tablespoon|
|Soy sauce/Tamari||1 Tablespoon|
|Grated ginger||1⁄4 Teaspoon|
Coat a wok or 10-inch skillet with no-stick spray and toss the garlic on medium-high heat for 30 seconds.
Remove garlic, add chicken, and stir-fry for 5 minutes.
Add apricots and scallions and stir-fry for one minute longer.
Remove chicken and apricots.
In a small bowl, combine orange juice, tamari, cornstarch, and ginger.
Add to wok and cook briskly, stirring, until thick and shiny (no more than 30 seconds).
Turn off heat, add chicken and apricots to sauce, and toss.
