Party Chicken Barbecue
|Soy sauce||1 1⁄4 Cup (20 tbs)|
|Honey||3⁄4 Cup (12 tbs)|
|Salad oil||1⁄4 Cup (4 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Ginger||1⁄2 Teaspoon, ground|
|Broiler fryers||3 Pound, each cut into quarters|
1. In 17 1/4" by 11 1/2 stainless-steel or enamel roasting pan, mix soy sauce, honey, salad oil, lemon juice, ginger, and salt. Add chicken quarters, turning pieces to coat them well. Cover and refrigerate at least 4 hours, turning chicken occasionally.
2. About 1 1/4 hours before serving, prepare outdoor grill for barbecuing.
3. Remove chicken quarters from marinade, reserving marinade. Place chicken on grill over medium heat; cook until golden on both sides, about 10 minutes. Then, to avoid charring, stand chicken quarters upright, leaning one against the other. Rearrange pieces from time to time and cook until fork-tender, about 25 minutes longer. During last 5 to 10 minutes of cooking, brush chicken often with marinade.
