Put oil, butter and onions into a 3-quart casserole.
Microwave uncovered on high for 3 minutes until hot.
Mix in peppers, cabbage, carrots, onions, cauliflower, broccoli, celery and pea pods.
Microwave on high, covered, for 4 minutes.
Add chicken and mushrooms.
Microwave uncovered for 4-6 minutes more.
