Stuffed Chicken With Apple Glaze

Ingredients
  Frying chicken 4 Pound (1 Whole)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Vegetable oil 2 Tablespoon
  Chicken flavored stuffing mix 6 Ounce (1 Package, Plus Ingredients To Prepare Mix)
  Chopped apple 1 Cup (16 tbs)
  Chopped walnuts 1⁄4 Cup (4 tbs)
  Raisins 1⁄4 Cup (4 tbs)
  Thinly sliced celery 1⁄4 Cup (4 tbs)
  Grated lemon peel 1⁄2 Teaspoon
  Apple jelly 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon
  Ground cinnamon 1⁄2 Teaspoon
Directions

Preheat oven to 350°F.
Sprinkle inside of chicken with salt and pepper; rub outside with oil.
Prepare stuffing mix according to package directions in large bowl.
Add apple, walnuts, raisins, celery and lemon peel; mix thoroughly.
Stuff body cavity loosely with stuffing.
Place chicken in baking pan; cover loosely with aluminum foil and roast 1 hour.
Meanwhile, combine jelly, lemon juice and cinnamon in small saucepan.
Simmer over low heat 3 minutes or until blended.
Remove foil from chicken; brush with jelly mixture.
Roast, uncovered, brushing frequently with jelly glaze, 30 minutes or until meat thermometer inserted into thickest part of thigh registers 185°F.
Let chicken stand 15 minutes before carving.
