Salt Crusted Cornish Game Hen

|Onion||1 , quartered|
|Thyme||1⁄2 Teaspoon (2 ml)|
|Garlic||4 Clove (20 gm) (unpeeled)|
|Coarse salt||1 Kilogram|
– Preheat oven to 425 °F (220 °C).
– Place an onion quarter, a garlic clove, and a pinch of thyme inside each bird. Truss.
– Spread a layer of coarse salt in the bottom of a baking dish or a roasting pan. Place the Cornish hens on the layer of salt and cover them with salt, pressing with your hand to make the salt stick.
– Cook for 1 hour. Remove from oven and crack salt crust with a ladle. Wipe off excess salt with a pastry brush.
