Special Lemony Chicken
|Unsifted flour||1⁄4 Cup (4 tbs)|
|Boneless chicken breast||6 , skinned|
|Margarine/Butter||1⁄4 Cup (4 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Mushrooms||8 Ounce, sliced|
|Hot cooked rice||1 Cup (16 tbs)|
|Chopped parsley||1 Tablespoon|
In paper or plastic bag, combine flour, salt and pepper.
Add chicken, a few pieces at a time; shake to coat.
In large skillet, brown chicken in margarine on both sides until golden brown.
Add lemon juice and mushrooms.
Reduce heat; cover and simmer 20 minutes or until tender.
