Golden Glazed Stuffed Chicken
|Broiler-fryer chicken||4 Pound (1 Whole Broiler Fryer Chicken)|
|Vegetable oil||2 Tablespoon (1 Bird)|
|Corn bread stuffing||4 Cup (64 tbs) (Prepared)|
|Peach preserves/Apricot preserves||1⁄2 Cup (8 tbs)|
|Margarine/Butter||1 Tablespoon, melted|
|Lemon juice concentrate||1 Tablespoon|
Preheat oven to 375°.
Brush chicken with oil; sprinkle lightly with salt and pepper.
Stuff neck and body cavities loosely with stuffing.
Place breast-side up on rack in shallow roasting pan.
Bake 1 hour and 15 minutes.
Turn remaining stuffing into greased 1-quart baking dish; bake 30 minutes.
Meanwhile, stir together preserves, margarine and lemon juice.
Spoon glaze over chicken; return to oven and bake 15 minutes longer.
