Filipino Chicken Afritada

Considered one of the best Filipino staple foods, chicken afritada is almost a "must" in every Filipino occasion.
Ingredients
  Cut up chicken 1 Pound (You Can Use Chicken Breast If You Like)
  Water 1⁄3 Cup (5.33 tbs) (For Dissolving The Cornstarch)
  Chicken 1 Cup (16 tbs) (You Can Use Chicken Breast If You Like)
  Garlic 3 Clove (15 gm), chopped
  Onions 1 Small, sliced
  Tomatoes 2 , sliced
  Potato 1 , cubed
  Green bell pepper 1⁄2 , sliced
  Chicken broth 1 Cup (16 tbs)
  Soy sauce 2 Tablespoon
  Corn starch 2 Teaspoon
  Fish sauce 1 Cup (16 tbs)
  Pepper To Taste
  Cooking oil 2 Tablespoon
Directions

Saute garlic, onion in cooking oil.
Add tomatoes and cook until softened.
Add chicken and fish sauce and saute for 5 minutes.
Add carrots and potatoes.
Add chicken broth and simmer for 7 minutes.
Add soy sauce.
Mix corn starch in water and add to the chicken. Mix. Simmer for 2 minutes.
Add green bell pepper. Cover and simmer for a few minutes.
Season with pepper.
Serve with steamed white rice.

*** If your sauce becomes too thick, you can thin it out by adding more water and simmer. ***
