Crispy Chicken Drumsticks
|Cooking oil||1 Tablespoon|
|Chicken seasoning||1 Teaspoon|
|Toasted crumbs||1 Cup (16 tbs)|
|Chicken drumsticks||8 , skinned|
|Egg||1 , beaten|
1 Place the oil and butter in a 30 x 20 x 5cm/12 x 8x2 inch ovenproof glass dish and microwave on full power for 1 minute. (Make sure the base of the dish is covered with fat.)
2 Mix the chicken seasoning into the cold Toasted Crumbs.
3 Dip the chicken legs into the beaten egg and coat with Toasted Crumbs to cover evenly.
4 Arrange the chicken legs in the heated fat, keeping the thick parts to the outside.
5 Microwave, uncovered, on full power for 10 minutes, turning over once, half way through cooking.
6 Stand for 2-3 minutes before serving; or serve cold with a watercress and orange salad.
