Cranberry Chicken has a great taste. The chichen lovers must try Cranberry Chicken. Cranberrry Chicken is an easy to make recipe.
  Oil 2 Tablespoon
  Onion 1 Small, chopped
  Ground pork 8 Ounce
  Ground ham 1⁄4 Cup (4 tbs)
  Cranberries 3 Ounce
  Orange peel/Lemon peel 1⁄2
  Mixed herbs 1 Tablespoon
  Fresh thyme 1 Tablespoon, chopped
  Egg 1 , separated
  Whole chicken 3 1⁄2 Pound, boned
  Salt To Taste
  Pepper To Taste

Preheat oven to 375 °F (190 °C).
In a skillet, heat oil.
Saute onion 2 minutes.
Let stand to cool.
In a large bowl, mix onion with remaining ingredients, except egg white and chicken.
Set aside.
In a mixer bowl, beat egg white until stiff peaks form.
Gently fold into stuffing.
Set aside.
On a large sheet of aluminum foil, place chicken, skin side down.
Cover with stuffing.
Fold chicken sides around stuffing in order to form a large roll.
Tuck in both ends.
Transfer chicken to a roasting pan.
Seal aluminum foil.
Cook in oven 2 hours.
Remove aluminum foil.
Roast 10 minutes.
