|Onion||1 Small, chopped|
|Ground pork||8 Ounce|
|Ground ham||1⁄4 Cup (4 tbs)|
|Orange peel/Lemon peel||1⁄2|
|Mixed herbs||1 Tablespoon|
|Fresh thyme||1 Tablespoon, chopped|
|Egg||1 , separated|
|Whole chicken||3 1⁄2 Pound, boned|
Preheat oven to 375 °F (190 °C).
In a skillet, heat oil.
Saute onion 2 minutes.
Let stand to cool.
In a large bowl, mix onion with remaining ingredients, except egg white and chicken.
In a mixer bowl, beat egg white until stiff peaks form.
Gently fold into stuffing.
On a large sheet of aluminum foil, place chicken, skin side down.
Cover with stuffing.
Fold chicken sides around stuffing in order to form a large roll.
Tuck in both ends.
Transfer chicken to a roasting pan.
Seal aluminum foil.
Cook in oven 2 hours.
Remove aluminum foil.
Roast 10 minutes.
