Red Stewed Chicken With Mushroom
|Chicken||4 Pound (1 Whole)|
|Water||4 Cup (64 tbs)|
|Fresh mushrooms||1 Cup (16 tbs)|
|Bamboo shoots||1 Cup (16 tbs)|
|Soy sauce||2 Tablespoon|
1. Wipe chicken with a damp cloth; then, with a cleaver, chop, bones and all, in 2-inch sections. Place in a heavy saucepan.
2. Boil water and pour over chicken. Bring to a boil again; then simmer, covered, 30 minutes.
3. Meanwhile slice mushrooms, bamboo shoots and water chestnuts. Add to chicken, along with soy sauce, salt and pepper; and simmer, covered, 30 minutes more.
