Citrus Chicken

  Boneless skinless chicken breast halves 4 Medium
  Finely shredded lemon/Lime peel 1⁄2 Teaspoon
  Lemon juice/Lime juice 1 Tablespoon
  Honey 1 Tablespoon
  Soy sauce 1 Tablespoon
  Orange juice 1⁄3 Cup (5.33 tbs)
  Cornstarch 2 Teaspoon
  Oranges 2 Medium, peeled and sectioned

Rinse chicken; pat dry.
Arrange chicken in an 8x8x2 inch baking dish, tucking under thin portions of chicken to make an even thickness.
In a mixing bowl combine lemon or lime peel, lemon or lime juice, honey, and soy sauce.
Pour over chicken.
Cover with vented microwave safe plastic wrap.
Cook on 100% power (high) for 4 to 6 minutes or till chicken is tender and no longer pink, rearranging and turning chicken over after 3 minutes.
Remove chicken from dish, reserving juices in dish.
Cover chicken to keep warm.
For sauce, combine orange juice and cornstarch; stir into reserved juices.
Cook, uncovered, on high for 3 to 4 minutes or till thickened and bubbly, stirring after every minute till slightly thickened, then every 30 seconds.
Stir in orange sections.
Cook, uncovered, on high for 30 to 60 seconds more, or till heated through.
Spoon atop chicken.
