Coq Au Vin
|All purpose flour||1 Cup (16 tbs)|
|Frying chicken||3 Pound, cut into serving pieces|
|Bacon slices||3 , cut in 1 inch pieces|
|Onion||1 Large, cut in quarters|
|Fresh mushrooms||8 Ounce, sliced (1 Package)|
|Garlic||1 Clove (5 gm), pressed or finely chopped|
|Red wine||1 Cup (16 tbs)|
|Snipped parsley||1 Tablespoon|
Combine flour, salt and pepper in a shallow dish.
Dredge chicken in flour mixture.
Place bacon in 2-quart casserole.
MICROWAVE 2 MINUTES on HIGH, or until almost crisp.
Add chicken and remaining seasoned flour to bacon and drippings.
Mix in onion, mushrooms, garlic, wine, brandy, bay leaf and parsley.
MICRO WAVE 15 MINUTES on HIGH.
Do not cover.
MICROWAVE 10 MINUTES on HIGH, or until chicken is fork tender.
Let stand 5 to 10 minutes, covered.
Remove bay leaf before serving.
