Braised Guinea Hen

This braised guinea hen is a game bird recpie that is easily prepared. Great for outdoor cooking and camps, the braised guinea hen is cooked together with spices like mustard, garlic, cayenne and seasoned to taste. Served with rice, it makes a great meal.
Ingredients
  Guinea hen 1
  Dry mustard 1⁄4 Teaspoon
  Butter 2 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Vinegar 1 Tablespoon
  Cayenne 1 Dash
  Salt 1 Teaspoon
  Chicken broth 1⁄2 Cup (8 tbs)
  Pepper 1⁄4 Teaspoon
Directions

Cut the guinea hen into quarters and saute in heated butter on all sides until nicely browned.
Mix together all remaining ingredients, pour over bird, cover, and simmer for 30 minutes or until almost tender.
Remove cover, turn up the heat, and continue cooking until liquid is almost evaporated.
Wild rice is an excellent accompaniment.
