Chicken Breast With Rice Primavera
|Zucchini||1 Small, diced|
|Yellow squash||1 Small, diced|
|Water||2 Cup (32 tbs)|
|Rice||10 Ounce (1 Package)|
|Chicken flavored sauce||1⁄2 Cup (8 tbs)|
|Tomato||1 Small, chopped|
|Boneless, skinless chicken breast halves||4|
|Olive oil||1⁄4 Cup (4 tbs)|
|Classic italian dressing||4 Tablespoon|
|Chopped fresh basil/1 teaspoon dried basil leaves||2 Tablespoon|
In medium saucepan, melt butter over medium high heat and cook zucchini and yellow squash for 3 minutes, stirring frequently, or until almost tender.
Add water, rice and chicken flavored sauce and tomato.
Bring to a boil, then reduce heat.
Simmer, uncovered, stirring occasionally (10 minutes) or until rice is tender.
Meanwhile, on broiler pan sprayed with nonstick cooking spray, arrange chicken.
Brush chicken with 1/2 of Italian dressing.
Broil, turning chicken once and brushing with remaining dressing, for 10 minutes or until chicken is done.
Stir basil into rice mixture; arrange chicken over rice.
