Chicken A La King
|Mushroom slices||1 Cup (16 tbs)|
|Cream||1⁄2 Cup (8 tbs)|
|Green pepper||1 , sliced|
|Dry sherry||1⁄2 Cup (8 tbs)|
|Boiled chicken||3 Cup (48 tbs), cut in large|
|Cream sauce||2 Cup (32 tbs)|
|Chopped pimento||1 Tablespoon|
Heat butter in a saucepan, add mushrooms, and saute about 5 minutes or until lightly browned.
Stir in green pepper and simmer a few more minutes.
Add sherry, Cream Sauce, salt, and cayenne.
Heat to a boil, stirring constantly.
Combine egg yolks with cream, then stir into mushroom mixture.
Add the chicken and heat through, but do not boil.
Just before serving, add the pimiento.
