Rock Cornish Hen

Ingredients
  Giblets 2 , chopped fine
  Lemon 1⁄2
  Oil 1 Teaspoon
  Shallots 4 , chopped
  Parsley sprigs 2
  Sherry 2 Tablespoon
Directions

Clean hens meticulously and wipe dry.
Rub with lemon half, salt and pepper.
Stuff birds: giblets, shallots, sage, parsley, salt and pepper.
Truss.
Oil bottom of clay baker.
Make a bed of parsley.
Add birds.
Moisten with sherry.
Close and bake.
SAUCE: Pour stock into a saucepan.
Add 2 tablespoons of cognac (or the juice of 1/2 lemon), 1 tablespoon currant jelly, a pinch of Cayenne pepper.
Heat without boiling (about 4 minutes).
