Steamed Chicken With Mushrooms

Ingredients
  Boneless chicken 750 Gram, skin removed
  Salt 1 Teaspoon
  Sugar 1 Teaspoon
  Dry sherry 1 Tablespoon
  Cornflour 1 Teaspoon
  Dried chinese mushrooms 4
  Ginger root slice 2 , peeled (Use Fresh)
  Sunflower oil 1 Teaspoon
  Freshly ground szechuan pepper/Freshly ground black pepper To Taste
  Sesame oil 1 Teaspoon
  Onion spring tassels 6 (To Garnish)
Directions

Cut the chicken into bite-sized pieces and mix with the salt, sugar, wine or sherry and cornflour.
Soak the mushrooms in warm water for 15-20 minutes, squeeze dry and discard the hard stalks.
Thinly shred the mushrooms and ginger.
Grease a heatproof plate with the oil.
Place the chicken pieces on the plate with the shredded mushrooms and ginger scattered on top.
Add the ground pepper and the sesame oil.
Place the chicken dish in a steamer and steam vigorously for 20 minutes.
