Ginger Spicy Chicken
|Whole chicken breasts||2 , split, skinned and boned|
|Vegetable oil||2 Tablespoon|
|Red bell pepper||1 Medium, cut into 2 x1/4 inch strips|
|Green bell pepper||1 Medium, cut into 2 x 1/4 inch strips|
|Canned pineapple chunks in juice||8 Ounce, undrained (1 Can)|
|Picante sauce||1⁄2 Cup (8 tbs) (Pace)|
|Chopped cilantro/Fresh parsley||2 Tablespoon|
|Grated fresh ginger||2 Teaspoon|
Lightly salt chicken breasts.
Heat oil in large skillet over medium heat.
Add chicken; cook about 5 minutes on each side or until light brown and tender.
Remove chicken; keep warm.
Add pepper strips, pineapple with juice, Pace® Picante Sauce, cilantro and ginger to skillet.
Cook, stirring frequently, 5 to 7 minutes or until peppers are tender and sauce is thickened.
Return chicken to skillet and heat through.
