|Onion||1 , coarsely chopped|
|Carrots||2 , coarsely chopped|
|Fresh cilantro sprigs||4|
|Saffron||2 Teaspoon (Asafran)|
|Kosher salt||1 Tablespoon|
|Chicken||1 , quartered|
|Salsa||1 Cup (16 tbs) (Adjust Quantity As Needed)|
Combine water, onion, carrots, cilantro, asafran and salt in a large saucepot or Dutch oven.
Bring to a boil and cook for 10 minutes.
When liquids return to a boil, cook for 5 minutes.
Turn off the heat and cover pot.
Allow chicken to cool in the broth.
Remove chicken to a platter.
Reduce broth to half by rapid boiling.
Place chicken on grill over hot coals and cook until done.
Baste with broth and turn frequently.
