Ingredients
  Water 3 Quart
  Onion 1 , coarsely chopped
  Carrots 2 , coarsely chopped
  Fresh cilantro sprigs 4
  Saffron 2 Teaspoon (Asafran)
  Kosher salt 1 Tablespoon
  Chicken 1 , quartered
  Salsa 1 Cup (16 tbs) (Adjust Quantity As Needed)
  Tortillas 6 (Hot)
Directions

Combine water, onion, carrots, cilantro, asafran and salt in a large saucepot or Dutch oven.
Bring to a boil and cook for 10 minutes.
Add chicken.
When liquids return to a boil, cook for 5 minutes.
Turn off the heat and cover pot.
Allow chicken to cool in the broth.
Remove chicken to a platter.
Reduce broth to half by rapid boiling.
Place chicken on grill over hot coals and cook until done.
Baste with broth and turn frequently.
