Roast Chicken And Parsley
|Olive oil||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Ground thyme||1 Teaspoon|
|Parsley||1 Bunch (100 gm)|
Wash and dry the chicken.
Salt and pepper it inside and out.
Rub the bird well, inside and out, with a dressing made of the oil, lemon juice, and thyme.
Stuff the bird loosely with the fresh parsley, and bake, uncovered, in a 350° oven for about 1 1/4 hours.
