Simple Chicken And Vegetable

Ingredients
  All purpose flour 1⁄2 Cup (8 tbs)
  Seasoned salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Chicken 3 Pound, cut up
  Vegetable oil 3 Tablespoon
  Green pepper 1 Small, thinly sliced
  Red pepper 1 Small, thinly sliced
  Garlic 2 Clove (10 gm), minced
  Tomatoes 3 Medium, peeled and chopped
  Fresh mushrooms 1 Cup (16 tbs), sliced
  Zucchini 1 Medium, thinly sliced
  Salt 1⁄2 Teaspoon
  Ground cumin 1⁄8 Teaspoon
  Hot water 1 1⁄4 Cup (20 tbs)
Directions

In a plastic bag, combine flour, seasoned salt and pepper.
Add chicken pieces and shake to coat.
In 3 quart casserole, place chicken and vegetable oil.
Microwave at high (10) 6 to 7 minutes.
Remove chicken from casserole and set aside.
Add green pepper, red pepper and garlic.
Microwave at high (10) 4 to 5 minutes until tender; stir after 3 minutes.
Add tomatoes, mushrooms, zucchini, salt, pepper, cumin and water.
Return chicken pieces to casserole.
Insert metal accessory rack.
Preheat oven to 325°F.
Bake for 40 to 45 minutes until chicken is tender.
