Crispy Pa Fried Chicken
|Broiler fryer chicken||1 1⁄2 Pound|
|Seasoned crumb coating||2 1⁄10 Ounce (Used For Chicken, Half Of 4.2 Ounce)|
|Vegetable oil||2 Tablespoon|
1. Preheat a 10-inch browning skillet, uncovered, at 100% (high) 5 minutes. Make a small slit in skin on each chicken piece.
2. In a pie plate, whisk together egg and water. Dip chicken pieces in egg mixture, then in coating mix according to package directions.
3. Add oil to hot browning skillet. Using hot pads, tilt skillet to coat evenly with oil. Quickly add chicken pieces, skin-side down and with meaty portions toward outside of skillet. Microwave at 100% (high) 4 minutes.
4. Turn chicken pieces over. Microwave at 100% (high) 4 to 5 minutes or until tender when pierced with a fork and juices run clear. Check for doneness toward end of cooking time; remove any done pieces. Continue cooking remaining pieces until done.
