  Rock cornish hens 4 Pound, thawed (4 Birds, 1 Pound Each)
  Finely chopped california walnuts/Roasted / boiled italian chestnuts 1 Cup (16 tbs)
  Olive oil 1⁄4 Cup (4 tbs)
  Salt 1 Teaspoon
  Celery salt 1 Teaspoon
  Poultry seasoning 1 Teaspoon
  Rosemary 1⁄2 Teaspoon
  Butter/Margarine 1⁄2 Cup (8 tbs), melted
  Salt To Taste
  Freshly ground pepper To Taste

Rinse birds; pat dry with paper towels.
Combine next 6 ingredients; rub half of mixture inside birds.
Truss birds; mount on spit, securing with holding forks.
Rub birds with remaining nut mixture; let stand 15 minutes.
Roast over coals 1 to 1 1/4 hours or till tender €”after 15 minutes, brush now and then with butter.
Sprinkle with salt and grind pepper over; continue cooking 10 minutes.
