Stuffed Chicken, Jamaican Style

Rub cavities of chicken with a mixture of salt and pepper.
Lightly fill body and neck cavities with Sweet Potato Stuffing.
Brush skin thoroughly with melted butter or margarine.
Place chicken, breast up, on rack in a shallow roasting pan.
Spread a piece of cheesecloth which has been dipped in melted butter or margarine over top and sides of chicken.
Roast uncovered at 325Â°F 3 to 3 1/2 hours, or until thickest part of drumstick is tender.
Keep cloth moist during roasting by brushing occasionally with fat from pan.
