Gary House, prepares the third in a series of three plank cooking recipes, Cedar Plank Grilled Gorgonzola Chicken! Flattened chicken stuffed with spinach, roasted red peppers, bacon and Gorgonzola cheese rolled and cooked to perfection all on a cedar plank.
Boneless skinless chicken breast | 4 , butterflied, pounded | |
Salt and pepper | To Taste | |
Dried basil | 1/2 Teaspoon | |
Crumbled gorgonzola cheese | 7 Ounce | |
Spinach leaves | 15 Large | |
Roasted red bell peppers | 7 Ounce | |
Bacon slices | 4 | |
Balsamic vinegar | 1/4 Cup (4 tbs) | |
Extra virgin olive oil | 3 Tablespoon |
GETTING READY
Soak cedar planks for 1 hr in water.
Place the planks on a grill heated at 350F, keeping the smooth side down. Lightly oil the charred surface.
MAKING
Season both sides of chicken with salt and pepper.
Add Gorgonzola cheese, bacon, spinach leaves, roasted red peppers to inside of the chicken breast.
Drizzle with balsamic vinegar. Roll up chicken breast and tie with string.
Place the chicken breast on plank, drizzle with extra virgin olive oil. Cook until the internal temperature reaches 165F.
SERVING
Serve with salad and our choice of beverage.
