Duck With Chestnuts
|Duck||6 Pound (1 In Number)|
|Pork||1 Pound (Cut Into 1 Inch Cubes)|
|Mushrooms||1⁄2 Pound, soaked and stemmed|
|Water||1 1⁄2 Cup (24 tbs) (Enough To Cover)|
|Onion||1 , quartered|
|Chestnuts||1⁄2 Pound, shelled an blanched (Small Sized)|
|Soy sauce||1 Cup (16 tbs)|
Chop the duck into 2 inch pieces; wash and dry them carefully.
Place pieces in a saucepan with the pork, mushrooms, onions, ginger and chestnuts.
Add the soy sauce and enough water to barely cover the ingredients.
Bring to a boil and turn down the heat to its lowest point and cover the saucepan tightly.
Simmer for about 2 hours.
Serve the duck, pork and chestnuts in a shallow bowl and pour enough sauce to only half cover the duck.
