1 Using a sharp knife, score the chestnuts.
2 In a pan, cook the apricots in boiling water for about 10 minutes.
3 Or, in a frying pan with 1/2 oz fat, heat the apricots for 4 to 5 minutes.
4 Remove the skins and peel.
5 Through a mincing machine, pass the nuts and add to the other ingredients.
6 Season the mixture well and mix all together to combine.
If using dried chestnuts, soak 2 ozs overnight, boil for 20 mins, drain and mince.
