Fried Pork With Water Chestnuts

Ingredients
  Pork 4 Ounce (125 Gram)
For marinade
  Soy sauce 1 Teaspoon
  Sherry 1 Teaspoon
  Cornflour 1 Teaspoon
  Water 2 Teaspoon
  Garlic 2 Clove (10 gm), chopped
  Onion 3 Teaspoon, chopped
  Ginger 1⁄2 Teaspoon, chopped
  Water chestnuts 2 Ounce (60 Gram)
  Sherry 2 Teaspoon
  Soy sauce 2 Teaspoon
  Sugar 1 Teaspoon
  Sesame oil 1⁄4 Teaspoon
  Red vinegar/Worcestershire sauce 1⁄2 Teaspoon
  Chili bean paste 1 Teaspoon (Use 1/2 If A Milder Dish Preferred)
Directions

Cut the pork into thin shreds and marinate for 30 minutes.
Slice the water chestnuts and pre-soaked mu-er into matchstick pieces.
Deep-fry the pork for 30 seconds, and then drain well.
Put 1 tablespoon of oil in a frying-pan and fry the onion, ginger and garlic for 15 seconds.
Then add the water chestnuts and muer and continue stir-frying for 30 seconds.
Then add the pork shreds and stir-fry for another 30 seconds.
Add the seasoning sauce, mix well and serve.
