Red Simmered Fresh Ham And Chestnuts

  Fresh ham 1 Small
  Scallion stalks 1
  Garlic 1 Clove (5 gm)
  Brown sugar 3 Tablespoon
  Sherry 2 Tablespoon
  Soy sauce 1⁄4 Cup (4 tbs)
  Water 2 Cup (32 tbs)
  Chestnuts 1 Pound

1. Trim off ham fat and place meat in a heavy pan. Cut scallion stalks in two; crush garlic and add along with sugar, sherry, soy sauce and water.
2. Bring slowly to a boil, then simmer, covered, 1 1/2 hours, turning ham at half-hour intervals.
3. Meanwhile, shell and blanch chestnuts Add to ham and simmer, covered, 1 hour more, turning meat twice for even coloring.
