Sweet Cherry Delight
|Cherry flavored gelatin||3 Ounce (1 Package)|
|Boiling water||1 Cup (16 tbs)|
|Cold water||1⁄2 Cup (8 tbs)|
|Lemon juice||1 1⁄2 Teaspoon|
|Dark sweet cherries||1 1⁄2 Cup (24 tbs), halved and pitted|
|Confectioner's sugar||2 Tablespoon|
|Almond extract||1⁄4 Teaspoon|
|Heavy cream||1 Cup (16 tbs), whipped|
|Jelly roll slices||3 , cut in halves (About 1/2 Inch Thick)|
Dissolve gelatin in the boiling water in a bowl; stir in the cold water and lemon juice.
Chill until mixture is slightly thickened.
Mix the sugar with cherries in a bowl.
Blend confectioners' sugar and extract into whipped cream.
Beat thickened gelatin until light and frothy.
Spread the whipped cream over gelatin; add the cherry halves and fold together.
Arrange jelly roll slices, rounded side up, around the inside of a 7-inch springform pan.
Turn the gelatin mixture into the center and spread into an even layer, being careful to keep the jelly roll slices in place.
Chill until firm.
