Cherry Refrigerator Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|White sugar||1 1⁄4 Cup (20 tbs)|
|Almond extract||1⁄4 Teaspoon|
|Sifted all purpose flour||2 1⁄4 Cup (36 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Chopped candied cherries||2⁄3 Cup (10.67 tbs)|
|Chopped almonds/Filberts||1⁄2 Cup (8 tbs)|
|Chopped candied pineapple||1⁄3 Cup (5.33 tbs)|
Cream shortening and sugar together.
Add eggs, lemon juice, rind and almond extract.
Sift dry ingredients together, and stir in; add fruit and nuts.
Form into 1 1/2-inch rolls.
Wrap in waxed paper; chill again.
Slice 1/4 inch thick, and place on greased cookie sheets.
Bake at 375Ã‚Â°F. 10 minutes.
Makes 5 dozen.
