Exotic Cherries Jubilee
|Bing cherries||2 Cup (32 tbs), pitted (With Juice Reserved)|
|Currant jelly||1⁄2 Cup (8 tbs)|
|Grated orange rind||1 Tablespoon|
|Brandy||2 Tablespoon, heated|
1. Into a saucepan cook juice from cherries along with the currant jelly, cornstarch and orange rind over low heat until the jelly melts and stir in the cherries.
2. With cover, simmer for about 10 minutes.
3. At the table, pour the warm brandy over the cherries in the serving pan and flame.
4. While the cherries are still flaming spoon them into meringue shells or over ice milk and serve.
