Miniature Cherry Date Loaves
|Packaged biscuit mix||2 1⁄2 Cup (40 tbs)|
|Packed brown sugar||1 Cup (16 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Wheat germ||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1 Teaspoon|
|Eggs||3 , beaten|
|Milk||1⁄2 Cup (8 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
|Pitted dates||1 1⁄3 Cup (21.33 tbs), snipped|
|Carrot||1 Cup (16 tbs), grated|
|Maraschino cherries||1⁄2 Cup (8 tbs), chopped|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
In mixing bowl stir together biscuit mix, brown sugar, flour, wheat germ, and cinnamon.
Combine eggs, milk, and butter.
Add to dry mixture; stir just till blended.
Fold in snipped dates, grated carrot, cherries, and walnuts.
Turn into ten greased 4 1/2 x2 1/2 x1 1/2-inch loaf pans (or one 9x5x3-inch loaf pan).
Bake at 350° for 20 to 25 minutes (or 60 minutes for large loaf; cover with foil during the last 30 minutes of baking).
Cool in pans 10 minutes.
Remove and cool on racks.
