Frozen Cherry Macaroon Dessert
|Coconut macaroon cookies||6 , broken|
|Maraschino cherries||1⁄4 Cup (4 tbs), drained|
|Chocolate ice cream||1 Quart|
Place steel blade in work bowl; add cookies.
Process till finely crushed; remove.
Reinsert steel blade; add cherries.
Process with on/off turns till finely chopped; add to crumbs.
Reinsert steel blade; add one-fourth of the ice cream.
Process till softened.
Continue processing ice cream, adding one-fourth at a time.
Add crumb mixture.
Process just till blended.
Spoon into paper bake cup-lined muffin pans or into one 8x4x2-inch loaf pan.
Cover; freeze 4 hours or overnight.
