Spiced Cherry Preserves
|Sugar||6 Cup (96 tbs)|
|Canned red tart pitted cherries||3 Pound, drained (Three 1 Pound Each Cans)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Red food coloring||1⁄2 Teaspoon|
|Cinnamon stick||3 Inch|
|Whole cloves||1⁄2 Teaspoon|
|Liquid fruit pectin||6 Ounce|
Combine all ingredients except the fruit pectin in a 4 to 6-quart kettle and mix well.
Bring to a rolling boil and boil for 1 minute, stirring constantly.
Add pectin all at once and bring to a boil, then remove from heat.
Skim off the foam and cool for 5 minutes, skimming and stirring to distribute fruit.
Ladle into sterilized jars or glasses.
Cover immediately with paraffin.
