Cherry Refrigerator Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Fine white sugar||1 1⁄2 Cup (24 tbs)|
|Eggs||2 , well beaten|
|Lemon||1⁄2 , juiced and rind grated|
|Almond extract||1⁄4 Teaspoon|
|Sifted all purpose flour||2 1⁄4 Cup (36 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Chopped candied cherries||2⁄3 Cup (10.67 tbs)|
|Chopped candied pineapple||1⁄3 Cup (5.33 tbs)|
|Chopped almonds/Filberts||1⁄2 Cup (8 tbs)|
Cream shortening and sugar together.
Add eggs, lemon juice, rind and almond extract.
Stir in sifted dry ingredients, then fruit and nuts.
Form into 1 1/2-inch rolls.
Wrap in wax paper; chill again.
Slice 1/4 inch thick and place on greased cooky sheets.
Bake at 400F for 10 minutes.
