Cinnamon Flavored Cherries Jubilee
|Unsweetened cherry juice||1 Cup (16 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Grated lemon rind||2 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Frozen unsweetened dark sweet cherry||4 Cup (64 tbs), thawed|
|Almond extract||1⁄2 Teaspoon|
|Amaretto||1⁄3 Cup (5.33 tbs)|
|Vanilla ice milk||1 Quart|
Combine first 5 ingredients in a large skillet, stirring well.
Bring to a boil, stirring constantly.
Reduce heat, and simmer 2 to 3 minutes or until mixture is thickened, stirring occasionally.
Remove from heat; stir in cherries and almond extract.
Place amaretto in a small, long-handled pan; heat just until warm.
Ignite with a long match; pour over Cherry mixture.
Stir gently until flame dies down.
Scoop 1/2 cup ice milk into each individual dessert bowl.
Spoon cherry mixture evenly over ice milk.
