|Butter||3 1⁄2 Ounce|
|Sugar||1⁄4 Cup (4 tbs)|
|Grated lemon rind||1⁄2|
|Flour||1 3⁄4 Cup (28 tbs)|
|Egg||1 , beaten|
|Maraschino cherries||1 Tablespoon|
|Chopped almonds||1 Tablespoon|
1. Stir butter and sugar until foamy. Add lemon rind, egg, and flour and work together.
2. Roll into small balls the size of walnuts. Roll the balls in beaten egg, then in chopped almonds.
3. Put them on a greased baking sheet and make a small dent in the middle. Place half a well-drained maraschino cherry in the center. Bake in a 350°F oven until the cookies are golden brown, about 10 minutes.
