Mom's Christmas Mincemeat Cheesecake
|Vanilla wafer crumbs||1 1⁄2 Cup (24 tbs)|
|Melted margarine||3⁄8 Cup (6 tbs)|
|Mincemeat||1 3⁄4 Cup (28 tbs)|
|Miniature marshmallows||4 Cup (64 tbs)|
|Orange juice||1⁄3 Cup (5.33 tbs)|
|Cream cheese||24 Ounce, softened|
|Grated orange zest||2 Teaspoon|
|Whipping cream||1 Cup (16 tbs), whipped|
Press a mixture of the wafer crumbs and margarine into a 9 inch springform pan.
Bake at 350 degrees for 8 minutes.
Spread the mincemeat over the chilled crust.
Melt the marshmallows with the orange juice in the top of a double boiler over boiling water, stirring until smooth.
Chill, covered, until thickened.
Combine the cream cheese and orange zest in a mixing bowl and beat to blend.
Beat in the marshmallow mixture.
Fold in the whipped cream.
Pour evenly over the mincemeat layer.
Chill, covered, until firm.
