|Enriched flour||1 Cup (16 tbs), sifted|
|Sugar||1⁄4 Cup (4 tbs)|
|Grated lemon peel||1 Teaspoon|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Egg yolk||1 , slightly beaten|
Combine first 3 ingredients.
Cut in butter till mixture is crumbly.
Add egg yolk and vanilla; blend well.
Pat 1/3 of dough on bottom of 9 inch spring form pan (sides removed) .
Bake at 400Â° about 8 minutes or till golden; cool.
Attach sides to bottom, butter; and pat remaining dough on sides to a height of 1 3/4 inches.
