Cheesecake With Pine Nuts And Pumpkin-Apple Butter

  Apple butter 1 1⁄2 Cup (24 tbs) (Purchased)
  Canned pumpkin 1 1⁄2 Cup (24 tbs) (Pure)
  Apple juice 3⁄4 Cup (12 tbs)
  Graham crackers 12 , broken into pieces (Whole)
  Packed golden brown sugar 1⁄2 Cup (8 tbs)
  Pine nuts 1 Cup (16 tbs), toasted
  Unsalted butter 5 Tablespoon, melted
  Cream cheese 32 Ounce (Four 8-Ounce Packages, Room Temperature)
  Powdered sugar 1 1⁄2 Cup (24 tbs)
  Sour cream 1⁄3 Cup (5.33 tbs)
  Fresh lemon juice 2 Tablespoon
  Vanilla extract 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Eggs 3 Large
  Cream cheese 8 Ounce (1 Package, Room Temperature)
  Sour cream 3⁄4 Cup (12 tbs)
  Powdered sugar 3⁄4 Cup (12 tbs)
  Vanilla extract 2 Teaspoon
  Fresh lemon juice 2 Teaspoon
  Salt 1 Pinch
  Pine nuts 1⁄4 Cup (4 tbs), toasted

Mix apple butter, pumpkin, and applejuice in small bowl, do ahead can be made 2 days ahead.
Cover and refrigerate.
For crust: Preheat oven to 350°F.
Grind graham crackers and sugar in processor until fine crumbs form.
Add nuts; using on/off turns, blend until nuts are coarsely chopped.
Add butter; blend until moist crumbs form.
Press crumb mixture onto bottom and 2 1/2 inches up sides of 10-inch springform pan.
Bake crust until golden, about 10 minutes; cool.
For filling: Using electric mixer, beat cream cheese in large bowl until smooth.
Beat in next 5 ingredients.
Beat in eggs, 1 at a time.
Pour batter into crust.
Bake cheesecake until puffed at edges and set in center, about 55 minutes.
Using electric mixer, beat cream cheese in medium bowl until smooth.
Beat in next 5 ingredients.
Spoon topping over hot cheesecake; place directly in refrigerator.
Chill uncovered overnight.Cut around cake; remove pan sides.
Sprinkle nuts around top edge of cake.
Serve with pumpkin apple butter.
