Vanilla Bean Cheesecake
|Low fat cottage cheese/Ricotta cheese||1 Pint|
|Low fat yogurt||1⁄2 Pint|
|Sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 1⁄2 Teaspoon|
|Vanilla bean||1 Inch, scraped|
Place in a blender container the cottage cheese, yogurt, eggs, sugar vanilla, and the scraped part of the vanilla bean.
Blend just until smooth and pour into a lightly buttered 9 inch square pan.
Place in a pan of hot water and bake in a 325Â° oven for 40 minutes or until set.
Let cool and chill.
