Vanilla Bean Cheesecake

Ingredients
  Low fat cottage cheese/Ricotta cheese 1 Pint
  Low fat yogurt 1⁄2 Pint
  Eggs 4
  Sugar 1⁄2 Cup (8 tbs)
  Vanilla extract 1 1⁄2 Teaspoon
  Vanilla bean 1 Inch, scraped
Directions

Place in a blender container the cottage cheese, yogurt, eggs, sugar vanilla, and the scraped part of the vanilla bean.
Blend just until smooth and pour into a lightly buttered 9 inch square pan.
Place in a pan of hot water and bake in a 325° oven for 40 minutes or until set.
Let cool and chill.
Contains 100 calories per 12 portion cheesecake, or 75 calories per 16 portion cheesecake.
