Almost Strawberry Cheesecake
|Gelatin||1⁄3 Ounce, sweetened with aspartame (Lemon Flavored Gelatin)|
|Boiling water||1 Cup (16 tbs)|
|Cold water||3⁄4 Cup (12 tbs)|
|Sweetener||5 Tablespoon (Aspartame)|
|Low fat cottage cheese||1 Cup (16 tbs) (1% Low Fat Cottage Cheese)|
|Whipped topping mix||2 1⁄8 Ounce, sweetened with aspartame|
|Graham cracker crust||6|
|Strawberry topping||1 Tablespoon|
|Strawberry halves||4 (For Garnishing)|
Dissolve gelatin in boiling water, add cold water and sweetener, stirring well.
Chill mixture until consistency of unbeaten egg white.
Place cottage cheese in container of an electric blender, process until smooth.
Fold into gelatin mixture.
Prepare whipped topping mix according to package directions, fold into gelatin mixture.
Spoon mixture into graham cracker crust, chill until slightly set.
Spoon strawberry topping on cheesecake, and chill until firm.
Garnish with strawberry halves.
