Honey Cheesecake

  Short crust pastry 1
  Cottage cheese 1⁄2 Cup (8 tbs)
  Honey 3 Tablespoon
  Super fine sugar 1⁄4 Cup (4 tbs)
  Butter 2 Tablespoon
  Eggs 2
  Ground cinnamon 1⁄2 Teaspoon
  Superfine sugar 2 Tablespoon
  Ground cinnamon 1 Teaspoon

Roll out the pastry and use to line an 8-inch pie plate.
Blend the cottage cheese, honey, sugar, butter, eggs and cinnamon until smooth .
Put into the pie shell and sprinkle with a topping made of superfine sugar and cinnamon mixed together.
Bake at 400°F for 10 minutes, then 375°F for 30 minutes.
Leave until cool before serving.
