Feeling motivated? The new year always makes me super motivated to pursue new goals and aspirations. Since one of my biggest goals this year is to lead a healthier lifestyle, let me share with you a way to make a scrumptious chocolate cheesecake using avocadoes! This means no dairy, no sugar, no gluten and low carbs. So no guilt, but with all of the flavour. A perfect way to start a motivated new year!
Mixed unsalted nuts
1 Cup (16 tbs)
1⁄2 Cup (8 tbs), chopped
2 Medium, cubed
1⁄2 Cup (8 tbs)
1 Cup (16 tbs) (1/2 - 1 cup)
5 Tablespoon (3 - 5 tbsp.)
1. For the base – in a food processor, add in the dates, coconut oil and nuts. Blend until coarse and set aside.
2. For filling – in a food processor, add in all the ingredients and blend until smooth.
3. In a serving glass, place the base and top with the filling. Top with coconut and serve.
